Dried fruit of any kind rocks; I keep prunes and apricots around regularly, and sometimes dates, too. Cranberries, cherries, pistachios, and hazelnuts make good additions for nougat, if you're in a nougat-making mood. (I just get others to make it for me.) There's also dried mango and papaya at whole paycheck, but I haven't tried it; I suspect the former would be great diced in a salsa, as the fresh version certainly is.
